Easy Bruchetta with Tomato and Basil

I had a weird craving while at the grocery store for some Bruchetta. I don't even like tomatoes but for some reason I wanted it so I decided to get the ingredients. 

-1/2 baguette or crusty loaf of bread
- 2 large cloves of garlic, cracked away from skin
- Extra-virgin olive oil, for drizzling
- 2 small plum tomatoes, halved and seeded
- 15 fresh basil leaves
- Coarse salt
1. Chop seeded tomatoes and place in a small bowl.
2. Pile basil leaves on top of one another and roll into a log. Then thinly slice basil into green confetti and combine with tomatoes.
3. Add a drizzle of oil and a little coarse salt to the bowl and gently toss tomatoes and basil to coat.
4. Preheat broiler to high, if you prefer you can also grill the bread.
5. Place bread slices on a pan and char bread on each side. Make sure to keep an eye on them!
6. Once toasted, rub them with cracked garlic and drizzle with oil. 
7. Pile toast around the bowl and place a spoon in the bowl, serve and ENJOY!

Last night I made homemade pizza. It probably wasn't the healthiest but it was delicious! At least I had whole wheat crust!

Banana Nutella Bread

I got this recipe from my mom over at Frostbites.
- 2 cups whole wheat flour
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1/4 cup unsalted butter, softened
- 1 cup organic sugar
- 1 1/2 cups mashed banana (about 3 bananas)
- 2 organic eggs
- 1/3 cup fat-free sour cream
- 2-4 Tbsp. Nutella 
- cooking spray

1. Preheat oven to 350. Spray an 8 1/2 in. x 4 1/2 in. loaf pan with cooking spray.
2. Whisk together flour, baking soda, and salt.
3. Beat together the butter and the sugar. Add the mashed banana, eggs and sour cream. Mix well until incorporated.
4. Add flour mixture in about 3 additions and mix well.
5. Pour about 1 cup of batter into loaf pan and add 1-2 Tbsp Nutella lengthwise and swirl with knife or toothpick.
6. Layer the batter with the chocolate batter in your prepared loaf pan.
8. With a knife or toothpick, stir gently to swirl the batters together.
9. Top with remaining Nutella and swirl as in Step 5.
10. Pop in the oven and check it after about 60 minutes and do the wooden pick test. 

This bread is so yummy and great if you are in a hurry and on the go. Whenever I don't have time to cook breakfast I just cut a slice of this and take it with me! I hope everyone had a lovely weekend!

Easy to do chicken salad

It has already been one busy week for me with the start of school. I found time to quickly make myself a healthy dinner for once lol 
Ingredients:
- Baby spinach
- 1 chicken breast
- Shredded mild cheddar cheese
-Italian seasoning
-salt and pepper
- Homemade salad dressing 
Salad dressing (I eyeballed the amount) 
- Balsamic vinegar 
- Extra virgin olive oil
- Minced garlic
- salt and pepper

1. I used my personal George Forman to grill up my chicken breasts and sprinkled the italian seasoning with a dash of salt and pepper to both sides before placing them on the grill. 
2. Then I made my salad dressing and eyeballed all the ingredients and threw them in a bowl and stirred.
3. Once the chicken was cooked I cut it up into small pieces. 
4. I drizzled the dressing on the spinach and sprinkled it will cheddar cheese.
5. Throw the chicken on top and there you go! NOM NOM NOM!

This morning I had weights and as soon as I got back I had a breakfast cookie from Hungry Girl Cookbook and I made some coffee! I never drink coffee but it sounded like a perfect combo with my cookie.


For dinner last night I had a guilt-free 1-2-3 blt from the hungry girl cookbook and soy chocolate milk.
- 2 slices of wheat bread
- 2 slices extra-lean turkey bacon
- 2 leaves romaine lettuce
- 2 slices tomato
- 2 teaspoons fat-free mayonnaise
